Recipe 15: Strawberry Pie


  1. 1 (15-ounce) package refrigerated pie crust dough
  2. 2 cups lemon-lime-flavored carbonated soda
  3. 1⁄2 cup sugar
  4. 2 tablespoons cornstarch
  5. 6 tablespoons strawberry gelatin*
  6. 1 teaspoon vanilla extract
  7. 8 cups sliced fresh strawberries
  8. 3 cups halved fresh strawberries
  9. Garnish: whole fresh strawberries
Instructions
  1. Preheat oven to 450°.
  2. On a lightly floured surface, place 1 pie crust on top of the other, and roll out to make 1 (14-inch) pie crust. Place in a 10-inch deep-dish pie plate. Trim excess pastry 1⁄2 inch beyond the edge of the pie plate. Fold under the dough hanging over the edge, and pinch dough to give crust a wavy edge. Prick bottom and sides of pie crust with a fork. Line crust with parchment paper, and fill with pie weights; bake for 15 minutes or until golden brown. Remove pie weights, and let cool completely.
  3. In a large saucepan, combine lemon-lime soda, sugar, cornstarch, and gelatin; bring to a boil. Remove from heat, and stir in vanilla and sliced strawberries. Let cool for 10 minutes. Using a slotted spoon, spoon strawberries into pie shell. Arrange halved strawberries on sliced ones. Slowly pour strawberry liquid over strawberries. Chill overnight or until set. Garnish with whole fresh strawberries, if desired.
This recipe was really easy and very yummy! I used a store bought pie crust and just followed the directions and I thought it turned out great. It was not super expensive although I did have to buy most of the ingredients and I did not have them on hand. Also between the sugar, Jello, and seven-up, it has a ton of sugar in it, so I can't really say it is a healthy dessert. Of course what else would I expect when I follow a Paula Deen recipe! I will definitely make this again, it is a great spring treat to make while the strawberries are on sale!

I have baked strawberry bread, and it was delicious! I wouldn't have thought of strawberry pie, but I will try it out. I bet it is really good =)! The photo is beautiful.
